Despite the low-quality photos, please trust me that this dressing is fantastic. If the photos fail in convincing you of its awesomeness, I have compiled a list of reasons I think you should try this dressing at least once:
- When I made this dressing for Thanksgiving last year, one of my aunts found a way to hoard almost all of the leftovers for herself.
- This Thanksgiving, I doubled the recipe, and she still found a way to hoard a lot of the dressing to the dismay of everyone else (they still found a way to get some).
- Even though my aunt and my mother were full, they still managed to put more dressing on their plates. In fact, my aunt was saying, "Whew, I'm full!" as she spooned up more dressing :).
- I gave this recipe to my stepmother, and she has made this dish a bunch of times already and has admitted that it tastes better than my paternal grandmother's recipe for dressing.
- Even though I made a double amount of the dressing, I still felt compelled to make this dressing again as soon I got home.
- I'm still happily chomping on this yummy concoction to this day. In fact, I can't wait to get home every day just to heat up another bowl.

- 4 chicken breasts, cooked
- 2 pans of cornbread or two quarts (I always use Buttermilk or "Dixie" cornbread)
- 2 hamburger or hot dog buns (I have used leftover, homemade yeast rolls or white bread)
- 2 Tbsp sage (add more to taste. I usually end up adding about a Tablespoon more)
- 1 medium onion, chopped
- 2-3 eggs, hard boiled and chopped
- 2 cans cream of chicken soup (separated)
- 1 stick margarine or butter, melted
- 2 cans chicken broth (3-4 cups)
DRESSING: Mix together cornbread, other bread, sage, onion, hard-boiled eggs, one can cream of chicken soup, melted margarine or butter, and two cans of broth in a big bowl.
PREPARATION: Make a layer of half the remaining can of cream of chicken soup in the bottom of a large crock pot. Top with 1/3 of the dressing. Top dressing with half of the chicken, shredding it as you put it in. Top with 1/3 dressing, remaining chicken, and remaining dressing. Spread other half of cream of chicken soup over top.
Cover and cook on low for three to four hours. Serve hot.
Trust me, I can testify that this dressing that Memory made is indeed the bomb! You have to understand--I enjoyed every special thing she cooked for Thanksgiving, but the dressing, that I loved!!!!!!!!!!!!!!!!!!! You know that old saying, "It is so good it'll make you slap your mama down?" Well, I'm the mama and I almost slapped myself. Yummy, this dressing is sooooooooooooooo good! Try it at your own risk--you will be coming back for more, but the best part is that you do not have to wait until Thanksgiving to eat some more :o)

ReplyDeleteThis looks amazing and I love cornbread dressing so this is just what I'm looking for. I live in China and the ovens her are very small, not even big enough for a whole turkey, in most cases. I am having our driver (we are not allowed to drive here)and his wive over for dinner in a week and I'm so nervous about trying to make enough dishes with just 2 burners and a little oven. I have a crock pot but was at a loss on how to use it to help me. Now I know just the thing to make in it! Though we have wal-mart they do not make or have all the yummy things from home. My 5 year old is missing the sugar cookies. I'm going to try the recipe you have posted for those too.

The recipe is a bit much for just me and the hubby so we invited friends to dinner and got raves. This was delicious and moist! I think next time I'm going to add some chopped celery, too. ReplyDeleteI'm eager to try this recipe, but I'm wondering why it calls for poaching chicken that is already cooked? Am I misunderstanding something?
ReplyDeleteAfter making this dressing for Thanksgiving dinner at my son's home (for about 25), my only regret is that I didn't make a separate dish (and leave it a home!) for myself. There were scant few leftovers, and they disappeared as members of the crowd finally left for home. I roasted 2 turkeys and baked 3 sweet potato pies, so it was a blessing not to have to make space in the oven for dressing. It was moist and flavorful, just like I like it! If still trying to eat your way through a lot of leftover turkey, try that in the recipe in place of the chicken which is called for. It's all good!
